How to Choose Pistachio Paste for Gelato & Ice Cream

October 14, 2026 · Ingredient Guides

Choosing a pistachio paste for gelato is not only a question of colour or flavour intensity. The right ingredient should suit the recipe, the production process and the result you want in the finished product.

1. Start with the application

Clarify whether the paste will be used as a primary flavour ingredient, combined with other flavour components, or applied in a way where visible pistachio character matters. The intended dosage and the balance of sugar, fat and other ingredients in your base will influence the result.

2. Understand the processing profile

Raw and roasted pistachio pastes can behave and taste differently. Roasting changes aroma and colour, while kernel selection and processing also influence the final profile. Ask your supplier to confirm the processing style and whether the product is 100% pistachio or includes other ingredients.

3. Do not select on colour alone

Natural pistachio colour varies with origin, cultivar, kernel grade and processing. A very bright green colour does not, on its own, prove quality. Evaluate flavour, aroma and performance in your actual recipe alongside appearance.

4. Test dispersion, texture and oil separation

Nut pastes can naturally release oil during storage. Mix the product thoroughly according to the supplier’s instructions before sampling, then test it in your real base and production conditions. Record dosage, mixing method, freezing conditions and sensory results so different options can be compared fairly.

5. Check technical and supply details

Before confirming an order, request the current product specification, ingredient declaration, allergen information, recommended storage conditions, shelf life, packaging options and available batch documentation. Confirm the lot-specific information and commercial availability with the supplier.

6. Run a controlled trial

Compare candidate pastes at more than one dosage if needed. Assess flavour after freezing and hardening, colour in the finished gelato, texture, and how well the pistachio character holds up beside other ingredients. A small documented trial is more useful than selecting by appearance alone.
